Violet rice was cooked steamed glutinous rice then spread evenly and to let them get cold; then sprinkle their surface with a layer of yeast which was made from 32 Chinese traditional medicine, kept at 30-320C during 32-36 hours, above the effect of Mucor, Sachromyces mould; continue fermenting the yeast of Violet rice Wine to become fermented glutinous rice. Then they were put in glazed terra-cotta jars and complemented fermented sticky rice 40% Vol and honey; were buried about 100 – 200 days to let fermented glutinous rice get ripe.
