According to "Studies on the Acetic Acid Fermentation Using Green Plum (Mesil)" which obtains the invention license by Chungmewon Life Research Institute and strictly selected Green Plums (Mesil) which are cultivated directly by farming, the mesil vinegar is made using a licensed manufacturing process. It is a health functional food manufactured by oligosaccharide which enhances the pure flavor of the Green Plum (Mesil) honey (collected from late February of full bloom season of ume flowers to early April).
